Sour Cream Blueberry Banana Bread
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup butter, softened
3/4 cup sugar
2 large eggs
1 cup bananas, 2 mashed
1/2 cup sour cream
1 cup blueberries
Heat oven to 350. Grease and flour pan or pans.
Sift together all flour, baking soda, salt and
cinnamon. Cream butter and sugar in a large bowl
at high speed of mixer, until light and fluffy.
Add eggs, bananas and sour cream and beat
until blended. Gradually beat in the four mixture
at low speed and continue beating until batter is
smooth. Fold in blueberries and pecans. Spoon
batter into prepared pans. Bake for 1 hour or
until cake tester comes out clean. Let bread cool
completely in the pan on a wire rack.
